The BrickWood Pizza Oven Door Guide

Heavy-Duty Steel Pizza Oven Doors for BrickWood Ovens

Which door fits your oven, how to hold more heat, when to use it and how to keep it looking good.

A BrickWood pizza oven door is laser-cut from thick 10-gauge steel, finished in a black high-temperature powder coat rated for 900°F+, and fitted with solid white oak handles. Set it against your oven opening to trap heat for bread, roasts, casseroles and other long, slow bakes. There are two sizes, one for each family of BrickWood ovens, and both ship FREE.

Pizza Oven Doors: Quick Answers

  1. What it is: a heavy steel door that covers your oven opening and holds the heat in.
  2. Two sizes: the Mattone Barile Series door (19.25" H x 27.5" W) fits the Mattone Barile and Mattone Barile Grande. The smaller door (11" H x 20" W) fits the Cortile Barile and 28" Mattone Cupola.
  3. Built from: 10-gauge steel, black high-temp powder coat, solid white oak handles with 2 coats of Minwax Helmsman Spar Urethane, and 304 stainless steel mounting hardware.
  4. Hold even more heat: add the Grapho-Glas Rope Gasket Kit to the back of the door for a tighter seal against the opening.
  5. Not sure which oven you have: contact us with your name and original delivery address and we'll look up your order.

The two doors aren't interchangeable

  • Each door is cut to fit its own oven opening, so the wrong size won't seal.
  • Both doors use the same 10-gauge steel, the same high-temp powder coat, the same white oak handles and the same stainless hardware. Only the size is different.

Is the Pizza Oven Door Insulated?

No. A BrickWood door is a single plate of thick 10-gauge steel. It doesn't need to be insulated to do its job: the oven's brick and insulation store the heat, and the door's job is to close off the opening so that heat can't escape.

Where a door loses heat is around its edges. Any small gap between the steel and the oven opening lets warm air leak out. That's why the best way to hold more heat is to seal the gap, not to make the door thicker.

For the most heat retention, pair the door with a rope gasket on the back of the door and a chimney damper to close off the flue. Together they seal the two places heat escapes.

Grapho-Glas rope gasket kit with high-temperature silicone for a BrickWood pizza oven door

Recommended add-on

Grapho-Glas Rope Gasket Kit

Seal the gap between your door and the oven opening. Attach the rope gasket to the back of your door and it presses against the oven when the door is in place, so less heat leaks out around the edges.

  • 6 feet of thick 5/8" Grapho-Glas high-temperature rope gasket
  • 1 tube (2.8 oz) of NSF / food-grade high-temp silicone, rated for indoor and outdoor use
  • 1 pair of disposable gloves
  • Fits both BrickWood door sizes
$39.99

See full kit details

How to attach the rope gasket

  1. Wipe the back of the door clean and dry where it meets the oven opening.
  2. Run a bead of the high-temp silicone along that path.
  3. Press the rope gasket into the silicone, trimming it to length where the ends meet.
  4. Let the silicone cure fully, following the directions on the tube, before you set the door against a hot oven.

When to Use Your Pizza Oven Door

A wood fire needs air to burn, so the door isn't for pizza night with a roaring fire. It's for the hours after, when the fire has burned down and the oven is full of stored heat.

Great times to close the door

  • Baking bread after the fire has burned down and the coals are cleared or pushed aside.
  • Roasts, casseroles and slow cooks that need long, steady heat.
  • Holding heat overnight so the oven is still warm the next day.
  • Keeping weather and critters out when the oven isn't in use.

Don't close the door on an active fire

  • Cutting off the air smothers the fire and fills the oven with smoke.
  • The steel gets hot, so always move the door by its wood handles.
  • Set a hot door down on a surface that won't burn or scorch.

Caring for Your Door

The powder coat and spar urethane finishes are made for the outdoors, but a little care keeps the door looking new for years.

  • Store the door out of the rain when you're not using it, or keep the oven covered.
  • Wipe off soot and ash with a dry or damp cloth once the door is cool.
  • When the handle finish looks dull after a few seasons, lightly scuff it and add a fresh coat of spar urethane.
  • Worn or weathered handles? Replacement white oak handles are sold at cost.

Pizza Oven Door FAQ

Which door fits my oven?

The Mattone Barile Series door (19.25" H x 27.5" W) fits the Mattone Barile and Mattone Barile Grande. The smaller door (11" H x 20" W) fits the Cortile Barile and 28" Mattone Cupola. The two doors aren't interchangeable.

I'm not sure which oven I have. What should I do?

Contact us with your name and original delivery address. We'll find your past order, tell you which oven you have and let you know which door fits.

What is the door made of?

Each door is laser-cut from thick 10-gauge steel and finished in a black high-temperature powder coat rated for 900°F+. The solid white oak handles get 2 coats of Minwax Helmsman Spar Urethane, and the door mounts with 304 stainless steel hardware.

Is the door stainless steel?

The door itself is powder-coated 10-gauge steel, not stainless. The mounting hardware is 304 stainless steel, so it won't rust where the handles attach.

Is the door insulated?

No. It's a single plate of heavy steel. The oven's brick and insulation store the heat, and the door closes off the opening so the heat stays in. To hold even more heat, seal the gap with the Grapho-Glas Rope Gasket Kit.

Do I need the rope gasket kit?

It's optional, but it's the easiest way to hold more heat. The rope gasket goes on the back of the door and fills the small gap between the steel and the oven opening, so less heat leaks out around the edges. One kit fits either door size.

When should I use the door?

Use it after the fire has burned down: for baking bread, roasts and slow cooks, and for holding heat overnight. Don't close the door on an active fire. A fire needs air, and smothering it fills the oven with smoke.

Do the handles get hot?

Wood doesn't carry heat the way steel does, so the handles stay much cooler than the door. The steel itself gets hot, so always move a door that's been against a hot oven by its wood handles.

Will the door fit another brand's oven?

The doors are cut to fit BrickWood ovens, so we can't promise they'll fit another brand's opening. The sizes are listed above if you'd like to compare.
