You've built a beautiful wood-fired pizza oven, so why would you top it with a cheap metal or clay vent pipe? Every BrickWood pizza oven kit is designed around the BrickWood Exhaust Kit, a double-wall stainless steel chimney that twist-locks together in seconds with no tools. The anchor plate is easiest to install while you build your oven, but it can be added after your oven is finished.

Which chimney kit fits my oven?

  • Exhaust Kit without pipe: fits the Mattone Barile and Mattone Barile Grande. Includes the anchor plate, chimney cap, spark arrestor and NSF / food-grade high-temperature silicone.
  • Exhaust Kit with 12" chimney pipe (recommended): fits the Cortile Barile and 28" Mattone Cupola. On a Mattone Barile or Barile Grande, the extra pipe gives you a taller chimney with stronger draw and less smoke at the oven opening.

Why a double-wall stainless steel chimney?

Most exhaust kits at the hardware store are rated for home wood stoves and furnaces, not the heat of a wood-fired pizza oven. Many are zinc-coated, which you don't want on an oven you cook in, and the stainless ones are usually thin, cheap-looking single-wall pipe.

BrickWood only sells top-of-the-line double-wall stainless steel kits made to fit BrickWood ovens perfectly, so there's no guesswork:

  • 6" diameter, double-wall stainless steel
  • c-UL-us listed to UL 103 and ULC S604
  • 2" clearance to combustibles
  • Twist-lock fittings, no tools needed
  • Made in the USA with a Limited Lifetime Warranty

Do I need a chimney damper?

A damper isn't required, but it's the best upgrade you can make to your chimney. The BrickWood Chimney Damper gives you up to 90% heat retention when compared to ovens without dampers. Keep it open while the fire burns, then close it to hold the heat in your oven for bread, roasts and slow cooking.

  • Your oven heats up quicker and stays hotter much longer
  • You burn less firewood
  • It installs in about 30 seconds and can be added to an oven that's already built

How the BrickWood Exhaust Kit goes together

  • Anchor plate: sealed to the top of your chimney masonry with high temp silicone.
  • Damper and/or chimney pipe (optional): twist-lock onto the anchor plate.
  • Chimney cap: twist-locks on top to keep rain out of your oven, with the spark arrestor attached.

Pizza oven chimney FAQ

Does a wood-fired pizza oven need a chimney?

Every BrickWood oven is designed with one. A chimney draws smoke up and away from the oven opening, so you're not cooking in a cloud of smoke, and the cap keeps rain out of your oven.

Can I add a chimney after my oven is built?

Yes. The anchor plate is easiest to install during construction, but it can be added to a finished oven.

Do I need to buy sealant?

No. Every BrickWood Exhaust Kit includes NSF / food-grade high-temperature silicone. Extra high temp sealant is available if you need it.
