How the Grande goes together

Eight steps from bare hearth to first fire. The foam form does the hard part, so a first-time builder can lay every brick right.

STEP 1

Set the foam form

Build your base and hearth from the FREE plans, then set the Grande foam form on top. Its ridges and angles show where every brick goes.

STEP 2

Lay the fire brick

Mortar 190 full-size fire bricks along the form's guides, row by row. No masonry experience needed.

STEP 3

Build the chimney & anchor plate

Brick up the chimney and set the BrickWood Exhaust Kit anchor plate as you go. Add a damper to hold in more heat.

STEP 4

Apply ceramic fiber blanket

Wrap the brick dome in ceramic fiber blanket. It keeps the heat in the oven and is a must for any wood-fired build.

STEP 5

Apply the stucco finish

Cover the blanket with mesh, tie it down, and trowel on a smooth stucco finish coat.

STEP 6

Remove form & attach chimney cap

Let the mortar cure, then pull the foam form out. The brick arch now supports itself. Top the chimney with the cap.

STEP 7

Optional brick finish

Prefer the classic look? Face the dome and chimney in brick or stone instead of stucco.

STEP 8

Optional enclosed front

Add a brick or stone front for a built-in look. Then hang the door and fire it up.

Big enough for a crowd — and your bread

The Grande is our large pizza oven: 996 sq in of cooking floor, room for (3) 10" pizzas at once. And because a barrel-vault brick oven holds heat for hours after the fire dies down, pizza night turns into a brick bake oven the next morning — bread, roasts, slow-cooked meals.

  • Wood fired pizza for a crowd
  • Outdoor bread oven on retained heat
  • Roasts, casseroles and slow cooking

Grande questions

What else do I need besides the kit?

Packages 1–3 need fire brick and refractory mortar: 190 full-size fire bricks and 7 bags (350 lb) of mortar for the Grande. Package 4 includes both. Every oven also needs a base; the FREE plans include the full materials list.

Do I need masonry experience?

No. The foam form lines up every brick, so first-time builders and weekend DIYers build the Grande themselves.

How big is the Grande compared with the Mattone Barile?

The Grande has 996 sq in of cooking floor (24" × 41.5") versus 704 sq in on the Mattone Barile. The Grande also has a taller 18.5" interior ceiling, compared with 17" on the Mattone Barile.

Can I bake bread in it?

Yes. A brick oven holds heat for hours after the fire is out, so it works as an outdoor bread oven and bake oven after pizza night.

How does it ship?

Kits ship FREE to the contiguous United States. Package 4 fire brick and mortar arrive by freight with liftgate delivery and may come on a different day.
