What's in the BrickWood Pizza Oven Tool Set

BrickWood pizza oven tool set: aluminum pizza peel, brass pizza oven brush with scraper and chrome pizza peel rack
The complete set: pizza peel, oven brush and peel rack.

Each tool does one job, and together they cover everything you'll do at the mouth of the oven.

Aluminum pizza peel

The peel is how your pizza gets in and out of the oven. Its 12" x 14" aluminum blade has a thin front edge that slides under a pizza easily, and it's light enough to control with one hand. Triple-riveted ferrules lock the blade to a smooth 21½-inch wood handle that keeps your hands well back from the fire.

Pizza oven brush with scraper

The brush keeps your cooking floor clean. One side has 65 tufts of stiff brass wire to sweep away ash and stray flour. The other side has a rust-proof steel scraper for anything baked on. The 40-inch wood handle reaches the back of the oven while you stay clear of the heat.

Chrome pizza peel rack

The wall-mount rack gives your peel a home next to the oven, so it stays off the ground and is ready to grab when the next pizza is ready to launch. It's made from chrome-plated steel that resists corrosion and chipping.

How to Launch and Turn a Pizza with an Aluminum Peel

  1. Dust the peel. Sprinkle a little flour or semolina on the blade so the dough can slide.
  2. Build your pizza on the peel. Work quickly. The longer topped dough sits, the more likely it is to stick.
  3. Give it a shake. Before you walk to the oven, jiggle the peel. If the pizza slides freely, you're ready.
  4. Launch it. Set the tip of the blade on the cooking floor where you want the pizza, then pull the peel back in one quick, smooth motion.
  5. Turn it as it bakes. The side facing the fire cooks fastest. Slide the blade under the edge and rotate the pizza a few times for an even bake.
  6. Pull it out. Slide the thin front edge under the crust and lift the pizza out of the oven.

Keep the peel out of the oven between pizzas. Aluminum heats up fast, and a hot peel makes the next pizza stick.

How to Clean Your Pizza Oven Floor

A clean cooking floor means no ash or burnt flour on the bottom of your crust. Brush the floor after you move the fire aside, and again between pizzas if you need to.

  1. Move the fire. Once your oven is up to temperature, push the fire to one side or to the back of the oven.
  2. Scrape off anything stuck. Turn the brush over and use the steel scraper to knock loose burnt cheese or dough.
  3. Sweep the floor. Use the brass bristles to brush ash and crumbs toward the fire or out the door.
  4. Take the brush out. Don't leave it lying in the oven or on hot coals.

Never use water on a hot oven floor

  • Cold water on hot fire brick or castable can cause thermal shock and crack your cooking floor.
  • Brush the floor dry. The heat of the fire burns off anything the brush leaves behind.

Storage and Care

  • Hang the peel on its rack. Mount the rack on a wall or post near your oven so the peel stays off the ground and ready to grab.
  • Hand wash the peel. Wash the blade with warm, soapy water and dry it right away. It's not dishwasher safe.
  • Keep the wood handles dry. Store your tools out of the rain so the handles don't crack or split.
  • Let the brush cool before you put it away. Brass and steel stay hot for a while after they come out of the oven.

Pizza oven tool mistakes to avoid

  • Building the pizza on a bare peel. Without flour or semolina, the dough sticks.
  • Leaving tools in the oven. Aluminum blades get hot fast, and wood handles can scorch.
  • Using a steel grill brush on the cooking floor. Steel bristles are harder than brass and can scratch the floor.
  • Pouring water on a hot floor. It can crack fire brick and castable.
  • Storing tools in the rain. Wet wood handles crack and split.

Pizza Oven Tools: Frequently Asked Questions

What's included in the set?

A 35½-inch aluminum pizza peel, a 40-inch oven brush with brass bristles and a steel scraper, and a chrome-plated steel wall rack to hang your peel.

Will these tools work with my oven?

Yes. They're sized for wood-fired pizza ovens, including BrickWood ovens.

How big is the pizza peel?

The aluminum blade is 12 inches wide by 14 inches long, on a 21½-inch wood handle, for 35½ inches overall. That's room for a 12-inch pizza, with your hands well back from the fire.

Can I launch pizzas with an aluminum peel?

Yes. Dust the peel with flour or semolina before you build your pizza on it, and the dough will slide right off. The thin blade also slips easily under a baked pizza to pull it out.

Will the brass brush scratch my oven floor?

Brass bristles are softer than steel, so they sweep ash and crumbs off a fire brick or castable floor without scratching it. Use the steel scraper side for anything baked on.

Is the pizza peel dishwasher safe?

No. Hand wash the peel with warm, soapy water and dry it right away.

Can I return the tools?

Unused tools in their original packaging can be returned within 30 days of your order. Contact us before sending anything back, and see our Returns Policy for the details.

How fast do they ship?

They're in stock and ship within 1 to 2 days, with FREE shipping to the contiguous United States.
