The BrickWood Exhaust Kit Guide

Double-Wall Stainless Steel Exhaust Kits for BrickWood Pizza Ovens

Which kit fits your oven, why the 12" chimney pipe is worth it, and how a damper holds the heat in.

The BrickWood Exhaust Kit is a double-wall stainless steel chimney system that twist-locks together in seconds, carries a Limited Lifetime Warranty and is made in the USA. Don't spend all day trying to piece together a cheap chimney kit. This one costs a few dollars more, but it keeps the rain out of your oven, carries smoke up and away from your cooking area, and its spark arrestor breaks up embers as they leave the chimney. Get it with or without a 12" chimney pipe. Every kit ships FREE.

BrickWood Exhaust Kits: Quick Answers

  1. What it is: a 6" double-wall stainless steel anchor plate, chimney cap and spark arrestor that vent smoke out of your pizza oven.
  2. Two kits: the kit with the 12" chimney pipe is made for the Cortile Barile and 28" Mattone Cupola, and it's the upgrade for a Mattone Barile or Mattone Barile Grande that wants extra draw. The kit without the pipe fits the Mattone Barile and Mattone Barile Grande.
  3. Our pick: the kit with the pipe. A taller chimney pulls harder, so more smoke goes up the chimney instead of out the front of the oven. See why.
  4. Hold more heat: add the BrickWood Chimney Damper for up to 90% heat retention when compared to ovens without dampers.
  5. Built from: 6" double-wall stainless steel with twist-lock fittings, c-UL-us listed to UL 103 and ULC S604, 2" clearance to combustibles.
  6. Perfect fit: made to fit BrickWood ovens perfectly, so there's no guesswork involved.
  7. Warranty: Limited Lifetime Warranty.
  8. Shipping: FREE shipping to the contiguous United States.
  9. Made in: the USA.

Which Exhaust Kit Fits Your Oven?

Both kits use the same stainless steel anchor plate, chimney cap and spark arrestor. The only difference is the 12" double-wall chimney pipe, which raises the chimney cap a full foot higher above your oven.

Why Add the 12" Chimney Pipe?

A chimney works by draft. Hot smoke rises, and as it climbs the chimney it pulls fresh air in through the oven opening behind it. The taller the chimney, the stronger that pull. The 12" double-wall pipe raises your chimney cap a full foot, and that extra height makes a real difference at the oven.

  • Stronger draw, less smoke at the door. A taller chimney pulls harder, so more smoke goes up the chimney instead of rolling out the front of the oven toward you and your guests.
  • Easier fire starts. A strong draft feeds your fire the air it needs, so a new fire catches faster and burns hotter and cleaner.
  • Smoke and sparks up and away. With the cap sitting higher, smoke and embers leave the chimney farther above your head, your patio and your cooking area.
  • Made for the Cortile Barile and 28" Mattone Cupola. This is the kit sized for these ovens.
  • Costs less in the kit. The 6" x 12" pipe is $179.99 on its own. In the kit it adds $150, so you save about $30 by getting it now.

Have a Mattone Barile or Mattone Barile Grande?

The kit without the pipe fits your oven. But if you want extra draw to help cut down on smoke, choose the kit with the pipe. The pipe twist-locks right between the anchor plate and the chimney cap.

Hold the Heat In with a Chimney Damper

An open chimney is exactly what you want while the fire is burning. Once the fire burns down, though, that same chimney keeps pulling heat out of your oven. A damper fixes that. Keep it open while the fire burns, then close it to trap the heat inside for bread, roasts and long, slow bakes.

Recommended add-on

BrickWood Chimney Damper

A 6" double-wall stainless steel chimney pipe with a built-in damper. A handle on the outside opens and closes the damper plate inside the pipe, so you control how much heat goes up the chimney.

  • Up to 90% heat retention when compared to ovens without dampers
  • Ovens heat up quicker, use less firewood and stay hotter much longer
  • Twist-locks onto the anchor plate in about 30 seconds with no tools
  • Fits both BrickWood Exhaust Kits, with or without the pipe
  • Can be added to an oven that's already built
  • Made in the USA, with FREE shipping
$199.99

How to use your damper

  1. Open the damper before you light the fire.
  2. Keep it open while the fire burns so smoke can escape up the chimney.
  3. Once the fire burns down to coals, close the damper to hold the heat in.
  4. Open it again before you light your next fire.

For the most heat retention, pair the damper with a BrickWood pizza oven door. The door closes off the front of the oven and the damper closes off the chimney, sealing the two places heat escapes.

BrickWood vs. Hardware Store Exhaust Kits and Dampers

It's tempting to grab a chimney kit or damper off the shelf at the hardware store. But almost all the exhaust kits and dampers sold there are rated for home use, like stoves and furnaces. They aren't designed for the high temperatures a wood-fired pizza oven creates.

Zinc or indoor rated? Leave it on the shelf.

  • Indoor rated: most store-bought kits and dampers are made for stoves and furnaces, not the heat of a pizza oven.
  • Zinc coated: many are galvanized with zinc, which can give off toxic fumes when it gets hot.
  • Single wall: if you do find a stainless steel kit in the store, it's usually a cheap-looking single-wall pipe.
  • Guesswork: store kits aren't made for your oven, so sizing and fit are up to you.

Installing Your Exhaust Kit

The anchor plate is easiest to install while you're building your oven, so plan for it during construction. If your oven is already finished, the anchor plate can still be added afterward.

Once the anchor plate is in place, everything else twist-locks together in seconds with no tools: the damper if you have one, then the pipe if you have one, then the chimney cap with its spark arrestor.

Why every BrickWood oven should have an exhaust kit

  • Keeps the rain out of your pizza oven.
  • The spark arrestor breaks up free-floating embers as they exit your oven.
  • Carries smoke up and away from your cooking area.
  • Gives you a place to add a damper and hold even more heat.

BrickWood Exhaust Kit FAQ

Which exhaust kit do I need?

The kit with the 12" chimney pipe is made for the Cortile Barile and 28" Mattone Cupola. The kit without the pipe fits the Mattone Barile and Mattone Barile Grande. If you have a Mattone Barile or Mattone Barile Grande and want extra draw to help cut down on smoke, choose the kit with the pipe.

Can I use the kit with the pipe on a Mattone Barile or Mattone Barile Grande?

Yes. The pipe raises the chimney cap 12" higher, which gives your oven a stronger draft and sends more smoke up the chimney instead of out the front of the oven.

Is the exhaust kit required?

It's optional, but highly recommended. It keeps the rain out of your pizza oven, and the spark arrestor screen inside the chimney cap breaks up free-floating embers as they exit your oven.

Do I need a damper?

It's optional, but it's the best way to hold heat once the fire burns down. A BrickWood oven with a damper gets up to 90% heat retention when compared to ovens without dampers. It twist-locks into either exhaust kit.

Can I add the damper or the pipe later?

Yes. Both twist-lock into the kit in seconds with no tools, so you can add either one anytime. The pipe costs less when you get it in the kit, though: the kit with the pipe saves about $30 compared with buying the pipe separately later.

Can I install the exhaust kit after my oven is built?

Yes. The anchor plate is easiest to install while you're building your oven, but it can also be added after your oven is finished.

What is the exhaust kit made of?

6" double-wall stainless steel with twist-lock fittings. It's c-UL-us listed to UL 103 and ULC S604 (a stainless steel outer wall is required for installation in Canada) and needs 2" of clearance to combustibles.

Can I use a chimney kit or damper from the hardware store?

We don't recommend it. Almost all the exhaust kits and dampers sold in hardware stores are rated for home use, like stoves and furnaces, and aren't designed for the high temperatures a pizza oven creates. Many are coated in zinc, which can give off toxic fumes when heated. The stainless steel kits you do find in stores are usually cheap-looking single-wall pipe. BrickWood Exhaust Kits and dampers are made to fit BrickWood ovens perfectly, so there's no guesswork involved.

Is there a warranty?

Yes. The BrickWood Exhaust Kit carries a Limited Lifetime Warranty.
